docs: update bedrock metadata

Description

Updates the bedrock reference docs to include all metadata including new fields.

Depends on dapr/components-contrib#3909

Merge only for 1.17 as this update is unlikely to hit 1.16

Need to move to v1.17. Do we need to add docs on whether you are using V1 verses V2? Is that now a consideration?

Just confirming what I mentioned the other day - other than an update of the underlying/backing dependency there is no material change to the end consumer. I'll rebase this onto 1.17 👍
