fix: Fix build in offline mode

What does this PR do?

• removes jest related deps from the che-activity-tracker as the extension currently does not contain tests
• bumps jest related deps for the che-remote extension
• these changes ^ allow to avoid errors related to typescript dependency

What issues does this PR fix?

Build fails for downstream in offline mode because of unresolved typescript dependency.

• I've tested downstream build in offline mode
