Changed to draft because we have some tests RevenueCatUI snapshot tests failing (see https://app.circleci.com/pipelines/github/RevenueCat/purchases-ios/31284). Will investigate and get back to this |

Update the Xcode 26 jobs in CircleCI to use Xcode 26.1 (previously it was using Xcode 26.0.1)
