feat: add additional support for running locally

Update images and add options to help run barito-flow locally, specifically:

1. Update kafka, zookeeper, elasticsearch, and kibana image in docker-compose
2. Update Go version to 1.24.10
3. Implement configuration (env variable) for gRPC reflection
4. Add gRPC API example in README.md
5. Update redactor to use map from environment if no Barito Market URL given
