feat: update migration documentation

Purpose

Updated the migrate-to-aks.mdx documentation to reflect current GHCP App Mod

AppCAT tool behavior and improved assessment configuration:

• Added capability and os parameter explanations in Overview section
• Restructured Analysis Targets into separate Targets and Capability tables
• Removed cloud-readiness and linux targets from configuration
• Moved OpenJDK versions from targets to capabilities
• Added issue-only analysis mode option
• Changed default mode from source-only to issue-only
• Updated assessment findings from 8 to 4 issues
• Updated resolution rate from 50% to 80%
• Simplified command reference (removed nested path)
• Added TASKS navigation step for Containerization Assist
