Rename this repository to "zallet"

This might seem a bit trivial, but before zallet's stable release can we rename this repo from "wallet" to "zallet"? I think it's worthwhile from an SEO standpoint and to reduce any potential confusion. Other parts of this project such as the container repository are called zallet.

I realize it will take some devops finagling across teams to make this change, but I wager that it's better to pay this cost sooner than later. It will be harder to rename after a widespread release.

The velocity on this project has truly been impressive to witness, thank you to everyone for your hard work!

The repo was named before we had decided on Zallet, and we've kept it as zcash/wallet for now because we don't know whether or not this repo will end up containing non-Zallet wallet crates.

Once we reach the beta and have more clarity into what will be present for production, we should revisit this decision.
