Use ClassifcationExtension from pystac #32

Is your feature request related to a problem? Please describe.
Once stac-utils/pystac#1093 is merged and released in pystac it would be good to update to use the ClassificationExtension rather than the hand coded URI added in #31

Update pystac version and apply the ClassificationExtension
