Automatically build the Mintlify docs by exporting the `openai.json` file to `apps/docs/api-reference`

When building the docs app, export the OpenAPI schema to apps/docs/api-reference/openapi.json and release the new docs version automatically.

Also, for this issue, I'd like to:

1. Update the light and dark logos with the new Snipshare logos;
2. Update the color palette;
