Issue with mlxp requirement #1

Hello,
I think the requirement of mlxp should be upgraded in the requirements.txt file. Currently it's 0.1.0 but when I run the toy example, I then get the following error message:
mutable default <class 'mlxp.data_structures.schemas.ConfigLogger'> for field logger is not allowed: use default_factory
However, when I upgrade to the last available version (i.e. 1.0.0), the code seems to work well, with the progression bar (slowly) evolving.
At least, this is the problem I seemed to have ^^
Btw, the package and underlying looks very promising, thanks for developing it !
