Update fluentd config to reduce load on pvc

Description

Our current fluentd setup is creating a lot of load on the pvc, which is most likely unnecessary. We should check the config and try to reduce the load, ideally before putting it on prod.

Work involved

• Modify fluentd config to reduce load on pvc

Acceptance criteria

• Check with Enrico Bocchi if the load on the pvc hase been reduced after the config changes, while still guaranteeing that all logs get pushed to opensearch
