Update project template

The projects template is fairly old (and clunky). We may want to use another template, for example, the hugo project example here: https://razvanmarinescu.com/#projects

I’ve updated the project template. Please let me know if this looks good to you. Once we add meaningful images for each project, the section will look even better.

I think more description should be added to some of the projects, and if you already have images in mind for specific projects, I’m happy to incorporate those as well.
