\left and \right parenthesis and braces not rendering correctly on MacOS 15.6 #189

Good evening,
When running this library, I'm finding that MacOS renders braces and parenthesis with substitute characters.
Example with Parenthesis:
Example with Braces:
(Notice how normal parenthesis work okay?)
When I repeat this on Centos 10, everything looks great.
Is there something I'm building incorrectly?

I built this library from source with minimal fuss. Here is some context.
- Dependencies installed via Homebrew
- Compiler: clang 17.0.0
