Publish swagger-ui for openapi specs

At the moment we're publishing the openapi.yaml file on GitHub Pages ([example](https://mobility-data-space.github.io/mds-edc/openapi/connector-vault-postgresql/latest/openapi.yaml))
We could enhance the experience by setting up a [swagger-ui](https://swagger.io/tools/swagger-ui/)
