build(deps): bump ejs and chimp in /tests

Removes [ejs](https://github.com/mde/ejs). It's no longer used after updating ancestor dependency [chimp](https://github.com/xolvio/chimp). These dependencies need to be updated together.


Removes `ejs`

Updates `chimp` from 0.51.1 to 4.3.0
